1. History and Background

Founded in 1872, Ouroku Shuzo boasts over 150 years of history. The brand name “Ouroku” was bestowed by the third-generation head, Heitaro. It is derived from the ancient Chinese term “Ten-no-Biroku” (a beautiful gift from heaven), reflecting the desire to create a sake that is a “King” among its peers.

A major turning point occurred during the era of the fourth-generation head, Yozo. Dissatisfied with the well water within the brewery, Yozo invested his personal fortune into a massive project to lay pipes from a water source two kilometers away, securing the “Kogane-ido” (Golden Well), which remains the heart of their brewing today. Currently, the sixth-generation head, Jozai Ishihara, serves as both president and Toji (master brewer). Having studied control engineering before entering the family business, Ishihara has built the current rigorous quality control system by fusing a scientific perspective with traditional craftsmanship.

2. Brewing Philosophy

The foundation of Ouroku Shuzo is the passion to “deliver living sake.” To realize this, they have constructed a system integrating five major concepts:

  • Unfiltered (Muroka): No carbon filtration is performed, preserving the original flavor and complexity of the sake.
  • Raw (Nama) or Single-Pasteurized (Namazume): Heat pasteurization is minimized to avoid deactivating the enzymes necessary for the sake’s “growth.”
  • Total Bottle Storage: To minimize the risk of deterioration, the sake is bottled immediately after brewing.
  • No Blending: Artificial unification of taste is avoided to respect the individuality of each fermentation tank.
  • Strict Cold Chain Management: In addition to sub-zero storage within the brewery, exclusive retailers are required to store the products at -5°C.

The brewery is not open to the public, a testament to their stoic dedication to facing the sake without external influence and their strong will to strictly manage delicate processes.

3. Characteristics of Ingredients and Production

The brewery maintains an extraordinary commitment to the water and rice that serve as the lifelines of production.

  • “Kogane-ido” Spring Water: This natural spring water from the Chugoku Mountains is rainwater from approximately 100 years ago, filtered through geological layers. It is ideal for brewing—free of iron and ammonia, yet rich in calcium and magnesium—and boasts a plentiful flow of 150 tons per day.
  • Partnership with Farmers: The brewery works closely with “Marukami No-en,” a local producer group in Higashi-izumo. They primarily use high-quality Yamada Nishiki rice grown by farmers driven by the desire to “grow rice that makes the Toji marvel.” This relationship of trust is the foundation for bringing out the individuality of each batch.
  • Technical Features: Leveraging expertise in control engineering, the brewery manages the complex brewing system to minimize fluctuations. Strict environmental control at sub-zero temperatures allows the delicate unfiltered raw sake to reach consumers in its optimal state.

4. Current Initiatives

While adhering to its traditional philosophy, Ouroku Shuzo is working to ensure succession to the next generation and market penetration through the following activities:

  • Strategic Expansion of Distribution: From 2022 to 2024, the brewery carefully selected new exclusive retailers and supported the opening of new branches for existing partners in regions including Hiroshima and Tokyo. This is a strategic move to reach more consumers while maintaining strict quality control.
  • Nurturing Talent: In October 2024, the brewery recruited new brewers (Kurabito) to pass down their small-scale, manual-focused techniques to the next generation, ensuring a sustainable production system.
  • Continuous Product Releases: Freshly brewed seasonal releases, such as “Cho-Ouroku Namagenshu 2024,” are provided to fans, offering a constant taste of “living” sake in the present moment.

Rather than extensively advertising awards from external competitions, the brand’s authenticity is sustained by its belief-driven brewing and the product experience itself, guaranteed by thorough distribution management.
